The International Food Assistance Initiative (IFAI)
The USPB is a non-profit organization founded by U.S. potato growers in 1971, which now represents approximately 4,000 potato growers across the country. In 2001, the USPB formed the International Food Assistance Initiative (IFAI) to teach organizations about the use of U.S. dehydrated potato products as a part of their food assistance programs. A variety of services can be provided by the USPB-IFAI, including:
- Education and training on the procurement, handling, preparation, and nutritional value of dehydrated potato products.
- Demonstration projects to provide experience to incorporate dehydrated potato products into programs and local food preparation
- Development of instructions and recipes appropriate in resource-limited settings for food assistance programming
- Information on purchasing, shipping, storage, and other aspects of incorporating dehydrated potato products into food aid and development programs
